There’s something about cookies that I love. Probably that you can’t go wrong if you bake a batch for yourself or for your family. And if there’s a chocolate lover in your home, they’re going to flip over these fudgy cookies!
Start with a brownie mix, add a few ingredients and you’ll be baking up a chocolatey mound of deliciousness in no time. These are a keeper… and with a cold glass of milk, they’re incredibly ENJOYABLE!

- 1 box store-bought brownie mix (regular, not “family size)
- 2 eggs
- 1/4 cup vegetable oil
- 1 cup semi-sweet chocolate chips

- Preheat the oven to 350°F. Grease two cookie sheets
- Combine the brownie mix, eggs and oil in a large mixing bowl. Beat the mixture with a spoon for about 50 strokes. Stir in the chips
- Use a small ice cream scoop to drop the cookies onto the baking sheets. Bake for about 8–10 minutes. The cookies should be soft to the touch when done. (Don’t over bake; they’ll continue to cook after you take them out of the oven)

While I’ve only made these ones with semi-sweet chocolate chips, you can get creative and add your own ingredients. Have you seen those sweet butterscotch chips in the store? They look like they could be a great addition to this recipe!
All you have to do is make sure you’re buying the right size box so that you don’t end up with cookies that are runny or overly mushy.
I promise you that these brownie chip cookies will be a hit. They’ve always been a favorite in my home and I can assure you they’re here to stay (both for my kids AND myself!).
